Ingredients
2 Tbsp butter
2 Tbsp minced garlic
1.5lb cooked shrimp, tails removed
1 small yellow onion, chopped
1 3/4C half and half
2-3 Tbsp white wine (optional)
pepper to taste
1/2 tspn McCormicks Perfect Pinch italian seasoning
1/2 tspn garlic powder
1 Tbsp Wegmans basting oil
2oz drained sundried tomatoes
1 1/2C shredded parmesan cheese
1 package fettucini, cooked to directions
Tuscan Shrimp Fettucini
Directions
Melt butter in pan over medium heat. Add minced garlic, sauté until fragrant
Add shrimp, cook 1-2min to warm it through and coat in mixture; remove shrimp and garlic and set aside. Leave butter liquid in pan.
Add chopped onion to pan with butter, sauté 1-2min until softened. Add half and half (and white wine if using); simmer until mixture begins to thicken slightly.
Add pepper, italian seasoning, basting oil, garlic powder and tomatoes; simmer 2-3 minutes, reducing heat to medium.
Add half of shrimp back to pan, along with the parmesan and spinach leaves. cook until leaves are wilted, then add rest of shrimp back into pan. Continue simmering until thickened. Serve over fettucini.
