Ingredients:
2lbs grilled chicken breast, chopped
3C white rice, cookedÂ
2C shredded cheddar cheese
1/4tsp garlic powder
10z frozen bag of broccoli cuts, thawed
Cheesy Chicken, Broccoli and Rice Casserole
Directions:
Preheat oven to 350 degrees F. Boil 3 cups of water on stove- add rice and mix. Immediately remove from heat and cover. Let sit for ~5 minutes, fluff and set aside.
In a large bowl, mix together chicken, broccoli, seasonings, gravy and cheese. Add rice and mix until thoroughly combined.
Spread mixture in a deep casserole dish and flatten. Top with reserved 1/2C cheddar and bake for 20 minutes.
*To cook the rice the way we do, boil 3 cups of water on the stove; add uncooked rice and stir. Immediately remove from heat and cover, allow to sit for five minutes until moisture is absorbed and rice is tender. Fluff with fork (or vigorously shake the pot around if you're lazy like us; this recipe is built for laziness).
