Ingredients:
4lbs cooked ground beef
1/2Tbsp McCormick Perfect Pinch Mexican seasoning
1tspn black pepper
1tspn chili powder
1 minced yellow onion
1 Tbsp minced garlic (heaping)
1 shot apple cider whiskey (burn alcohol off)
taco sauce
1-10oz can of mild Rotel
1-10oz can original Rotel
chopped scallions
1-12oz container fresh salsa
1 each of sweet onion, red pepper and green pepper, chopped and mixed
1 jar pickled jalepeno slices
Franks RedHot hot sauce
2 pkgs large flour tortillas
2C cooked rice
1 bag shredded mexican cheese
1 bag shredded cheddar cheese
1 pkg sliced pepper jack cheese
1 jar salsa con queso
sour cream
*These are just ingredients we chose to use. You can substitute any ingredients usually used for taco or burrito dishes!
Mexican Lasagna
Directions:
Preheat oven to 375 degrees F. Cut edges of tortillas to square them off so they fit in a casserole dish.
Mix beef, mexican seasoning, pepper and chili powder. Add minced onion, minced garlic and whiskey.
Coat bottom of casserole dish with taco sauce to prevent tortillas from burning; layer the bottom with tortillas.
Layer casserole with toppings of your choice, dividing layers with tortillas as needed. Example layout:
Layer 1: beef, fresh salsa, pepper jack slices
Layer 2: pepper/onion mix, beef, shredded mexican cheese
Layer 3: 2 cans of Rotel, beef, salsa con queso, fresh salsa
Layer 4: jalapenos, beef, pepper jack cheese, Franks hot sauce
Layer 5: shredded cheddar cheese, green onions, rice
Top layer: Franks hot sauce, fresh salsa, shredded cheeses, scallions.
Bake for 30 minutes or until everything is melted and warmed through. Serve with sour cream and other condiments of your choice.
